I'm thinking I'll go the hot sauce route. This is the first year I've actually been serious about growing things and I'm overwhelmed with tomatoes, strawberries, chiles, and I've got a bunch of eggplant that's about to be ready.

I made fermented habanero/ginger/persimmon hot sauce once and it was absolutely amazing, you should go that route.

That sounds great. I'm not a big fan of sweet with spicy. I hadn't thought about using ginger. I had a friend years ago who made a sauce that was just habanero, carrot, and vinegar and it was pretty cool. Habaneros leave a metallic taste on my tongue and ginger would be a cool counter flavor

it wasn't really sweet, i only put one persimmon in there just for a little bit of flavour but the ginger and habanero pairing was the best.
