If people are willing to sit in line at arbys fkr 29 minutes to get cold fries and Luke warm roast beef, then people will be fine waiting 10-15 minutes to get a fresh cook steak that's cut up so they can eat it on the road.

I passed this concept onto a friend a few years ago and he chose to do basic American diner fare instead. His restaurant closed down after first anniversary and he gave up his dream of owning a restaurant. Had he listened to me, he'd own the largest drive thru steak franchise in the country.
