for me....roasting a goose stuffed with lemons, apples, stuffing, and garlic...i'm basting it with a brown sugar and brandy mixture...the stuffing is normal stuffing, just dried bread, apples, nuts, etc

i'm also making a simple lettuce salad with mustard dressing

aligot (these are basically mashed potatoes with tomme d'Auvergne cheese which i had to order online, and unlike mashed potatoes it has more the consistency of toothpaste)

for some reason spinach is still growing in my garden so i am going to whip up a quick simple creamed spinach (butter, cream, spinach, thats it, maybe some eggs or flour to thicken it)

also making some garlic-butter mushrooms, i went hiking the other day over by donut falls and found a bunch of what look like portabellas but i dont think they are actually portabellas, my friend checked them out he is a chef here and forages for his restaurant so he knows whats poisonous and whats not

for dessert i am going to try and "wing" a bread pudding with tequila because richard buys me tequila every year for xmas so my cabinet is filled with it, was thinking some kind of mexican citrus tequila sort of like bread pudding

for lambgoat (my dog)...i bought him a cornish game hen that i ordered from the same farm i got my goose, i am wrapping it in bacon and stuffing it with rosemary and garlic and since it's smaller i might actually just broil it, that way i can get it brown enough without having to overcook it on the inside, lambgoat is a foodie just like me ha!...for dessert i made him home peanut butter bars

as for wine...i can't order wine online i live in utah, and usually my cousin drives down from wyoming for christmas and i ship the wine i wanted to his place and he brings it, so i am going to open some of the bottles i promised myself i'd never open, the age of these wines and quality, three of them for sure, would probably go for at $1,000 a bottle at a fancy restaurant, they had maybe 5-10 more years to go oh well theyll still be delicious
